Bacon-wrapped enoki & shitake



Inspired by a previous tempura offering at a Japanese restaurant, I made these delicious morsels of salty and chewy. It’s bacon, what’s not to like!

I cut up each strip of bacon into 3 parts and wrapped each piece around a bunch of enoki and a few slices of rehydrated shitake mushrooms. You can see it here before they were baked in the oven.

At 400 degF in the oven for about 15-20 mins, they are ready. The bacon is not crisp and the mushrooms not burned. The tempura version is deep-fried [duh!].

These make really good finger food but we had it for dinner with rice and veggies.

    Yum! My mom does the same thing for our Thanksgiving dinners but pan fries the bundles. She’s used string beans, too, which are delicious. I’ll have to suggest the oven method, as that’s more efficient.

  3. hehe, was at a party where we basically decided that bacon-wrapped *anything* is delicious. we had bacon-wrapped dates at the party – and it was good even when dates are not really my thing. mushrooms would be so good, too!

    Oh! Yes U’re rt….bacon wif almost anythg is gd. (Thou I’m no big bacon fan myself). Am thinking bacon wrapped with asparagus too! Think it’d make a pretty piece for a party together wif bacon with enoki & shitake. I can imagine hoe tempting & colorful de palate would be. Mmmmm…..
