Very Serious Vanilla Ice Cream
The birthday present my folks sent me this year made its debut today. I picked a vanilla ice cream recipe to “christen” it and of course, I had to go with an AB recipe. Who else would I trust more?
It will be for Ben’s birthday party tomorrow, but I tasted the base after it had been poured out from the ice cream maker. To toot my (or AB’s) own horn, it was good.
Serious Vanilla Ice Cream
Recipe courtesy Alton Brown
Yields: 1 quart
2 cups half-and-half
1 cup whipping cream
1 cup minus 2 tablespoons sugar
2 tablespoons peach preserves (not jelly)
1 vanilla bean, split and scraped
Combine all ingredients (including the bean and its pulp) in a large saucepan and place over medium heat. Attach a frying or candy thermometer to inside of pan. (see note below) Stirring occasionally, bring the mixture to 170 degrees F. Remove from heat and allow to cool slightly. Remove the hull of the vanilla bean, pour mixture into lidded container and refrigerate mixture overnight to mellow flavors and texture.
Freeze mixture in ice cream freezer according to unit’s instructions. The mixture will not freeze hard in the machine. Once the volume has increased by 1/2 to 3/4 times, and reached a soft serve consistency, spoon the mixture back into a lidded container and harden in the freezer at least 1 hour before serving.
NOTE: If you do not have a thermometer, bring the mixture just barely to a simmer. As soon as you see a bubble hit the surface, remove it from the heat. Do not let it boil.

OOoh Stef, that sounds yummy! Homemade icecreams are the best. Any toppings for this?
real nice…you can make your own pulut hitam ice cream now.
Your mixer is so pretty! I’ve got the plain white one (It was a gift, so I really can’t complain. I LOVE my mixer.)
Jarrod and I recently purchased AB’s salt cellar after much oogling of it on television. I get such satisfaction flipping it open each time I use it. Alton rules!
Wow! So cool! Next time U can progress to making ice-cream cake huh?
That looks simple divine!
I have that attachment and I LOVE it! I feel sad that I didn’t use it more this summer. I made green tea ice cream (my fav) a couple times and that was it. Maybe I’ll make some other kind this weekend!
Your vanilla ice cream sounds heavenly!!! Post pics from the party!
I am so jealous that you have a Kitchen Aid Mixer. :*)
