Shrimp Scampi

Both Mike and I have a dish that we always talk about making for the other but for the longest time, never end up making. My dish is paella and his, this shrimp scampi that his mom recently found the recipe for. It now looks like Stef’s paella is the true mystery. (I know I’ve blogged about it before but really, Mike made it. I just showed him how; technically, I haven’t made it for him.)

This scampi was delicious. We served it with some Torres Viña Sol.

Shrimp Scampi 

24 large prawns
¼ lb unsalted butter
1 tbs minced shallot
1 tsp minced garlic
½ cup good sherry (dry)
1 ½ cups whipping cream
1 tsp paprika
1 pinch white pepper
salt to taste
1 tbs Worcestershire sauce
1 tsp tobasco

1. Add butter, shallots and garlic in saucepan over medium heat; sweat em’
2. Add sherry and flambé it. Reduce until all liquid is gone. Do not brown mixture.
3. Add whipping cream and remaining spices and seasonings and reduce to half. Stir continuously. At desired consistency add prawns and cook 3-4 minutes until done.
4. Serve w/linguine and bread

    Delish! My heart skips a beat whenever it hears certain food. Shrimp Scampi is one of them. U always make it sound so easy to dish up any dishes.
    Ok when I’m there,I’d like mine with Farfalle/Tagatelli. 😉

    Omigosh…That looks scrumptious. I love shrimp and that combination with butter, garlic and cream sounds decadent. I’m definitely going to try this. Stef. It’s 1010am, just got into work (we have flexi-time here) and nursing a cup of strong coffee. I’M HUNGRY!!!!! 😛
