Chicken Stew with Biscuits

I have raved about the recipes from American Classics and this is another one of them – Chicken Stew (Chicken Pot Pie filling) and Buttermilk Biscuits.

We made Chicken and Dumplings a while ago and did enjoy it but I prefer the biscuits instead of the dumplings. It’s just difficult to get it so that the dumplings are not too doughy.

    Wow Stef, the biscuits looks absolutely divine! I’m sure the chicken stew is too! ;) Hey, just a thought, I’m one of your avid blog reader, and you and Mike really do make the most delish gourmet foods in a home kitchen. I wonder what kind of kitchen cookware, appliances, utensils and etc you own and recommend? Coz I’m now researching on how to outfit a new kitchen of my own (I heart cooking too), and any tips or help you can give will be so greatly appreciated! And I’ve noticed you use All Clad pots. ;) Cool stuff!

    STEF: Hi Nicki, thanks for reading da*xiang! We built our kitchen over a couple of years and here are some of the things we use: All-Clad for pans, as you noticed, but we also do use some non-stick Calphalon pieces. Those are really sturdy. I like Corelle plates because they are light and for the plain white basics, I go to Crate and Barrel. We have some wooden spoons (keep oiled to maintain them) and love OXO kitchen helpers. We try to avoid uni-taskers because we are big AB fans. You should check out AB’s Gear for Your Kitchen. Let me know if you have specific questions!

    This looks sooo good. Reminds me of the Eurasian Chicken Pie we make at Christmas, but with pastry on top. Just wondering if you just used the chicken meat or meat with the bone.

    STEF: We used chicken thigh meat, no bones.

    Yummy! Did you use ready made biscuits (pre-bake) from Pillsbury or did you make the biscuits from scratch?
