Chapchae/Japchae

Mum always made such good chapchae/japchae that I was a little afraid to make my own version. I’m proud to say that they taste a lot like hers. She would be too, I think.
There are many good recipes out there and mine is loosely based around this one at Steamy Kitchen and sneaky observation of mum making her version, of course.
